Picked later than ever, on October 14th, the fruit was fully destemmed and cold-soaked for four days before inoculation with a yeast isolated from the Côte du Rhône. At five brix, the wine was pressed to all French Oak, 62% new, to finish fermentation in barrel. Bottled unfined and unfiltered.
