2021 Sonoma County "The Derivative" White Wine

15% Sonoma Valley Muscadelle, Pagani Ranch

Three tons of Semillon from Rossi Ranch were picked on September 8th at 24.0 Brix.  Fermentation was two-thirds in stainless and one-third in a 500 L Taransaud Pure puncheon, an oak cask designed to enhance a white wine’s minerality while still preserving its fruitiness.  The Pagani Muscadelle, on the other hand, was picked on October 1st at 21.9 Brix and fermented exclusively in stainless steel.  Like years past, no malolactic fermentation to preserve acidity.  Filtered for stability at bottling but not fined.

Tasting Note:

Medium-light golden-yellow.  Attractive scents of lemon oil, Calimyrna figs, green almond, and wild thyme.  Supple on entry with a medium to medium-full bodied frame, flavors of lemon, straw, and a kiss of white grapefruit flow across the palate.  Slightly more acidity than the lip-smacking 2020 but every bit as gulpable.  Pair with fresh goat cheese, seafood, chicken, or pork and enjoy from release through 2029.  (MRO - 07/15/23)
