The 126-year-old vines in our block of Saitone were picked on September 28th, just after Carlisle Vineyard but before Papera Ranch.  The fruit was fully destemmed and cold soaked for 5 days before inoculating with our favorite local yeast, WS (so named as the yeast was isolated in the 1980s from a spontaneous ferment of Williams-Selyem Russian River Valley Zinfandel).  After 23 days on the skins, it was pressed to all French oak, 18% new.  Unfined and unfiltered.

Tasting Note:

Medium-dark ruby-garnet.  Gorgeous, hi-toned berry and blood orange aromas leap from the glass.  A subtle but pleasing earthiness emerges on the backend of the sniff.  Full-bodied but with ample acidity, it feels lighter on its feet than is typical of a wine of this concentration.  Flavors of cherry, pomegranate, and red licorice extend through the lip-smacking finish.  Drink from release if you prefer your Zins fresh and fruity or give it a few years and enjoy through 2033.
